100g butter diced, plus extra for greasing.
120g bittersweet chocolate, chopped
100g lightly beaten eggs
60g sugar
40g flour plus extra for dusting


  1. Preheat the oven to 160 degrees C. Butter the pan and dust it with flour. Melt the chocolate and butter in a bowl over a pan of hot water.
  2. Fit the stand mixer with the whisk attachment and whisk the eggs and sugar together for at least 7 minutes, until pale and thick.
  3. When the temperature of the melted chocolate reached 45 degrees C whisk into the egg mixture, one third at a time at a medium speed, ensuring it retains its volume and does not deflate. 
  4. Using a spatula, gradually fold in the flour and walnuts. 
  5. Pour the batter into the prepared pan and bake for 25-30 minutes.
  6. Allow to cool before cutting into squares.
